

Weetbix Slice is a New Zealand home-baked favourite! Follow this recipe to re-create a childhood memory or Grandma's favourite.
Ingredients
175g melted butter
160g caster sugar
3 Weetbix (crushed)
150g self-raising flour
85g desiccated coconut
2 x 395g cans sweetened condensed milk
300ml lemon juice

Method
STEP 1
Preheat oven to 180C/160C fan-forced. Grease a 20 x 30cm slice pan and line base and sides with baking paper allowing overhang.
STEP 2
Place butter, sugar, Weetbix, flour and coconut in a large bowl and stir to combine. Spread mixture over the base of the prepared pan. Bake for 15 minutes then set aside to cool.
STEP 3
Whisk condensed milk and lemon juice together in a bowl until smooth and combined. Pour over the Weetbix base. Bake for 20 minutes or until the top layer is set or the edges bubble. Cool to room temperature chill in fridge overnight.
STEP 4
Cut into pieces and store in an airtight container.
